Abasolo El Whisky de México is crafted and distilled from non-GMO, Cacahuazintle (ka-ka- wa-sin-‘tɬe) corn cultivated over generations by local farmers for its distinct, extraordinary flavor. More than 7,000 years ago, corn (mahiz) was developed by the indigenous people of México. More than just a crop, corn is the cultural foundation and historical identity of the country.

Cooking technique

Through our unique use of NIXTAMALIZATION—a 4000-year-old cooking technique—the deepest notes of these ancestral ingredients are uncovered. There is no whisky in the world with a process or taste profile like Abasolo.

First Mexican whisky distillery

We couldn’t create The Whisky of México without building the first true whisky distillery in México. Destilería y Bodega Abasolo honors México’s culture of corn through our obsessive, innovative production of farm-to-bottle spirits. Every drop of Abasolo Whisky is produced and aged right here in Jilotepec de Abasolo, México.

Barrel aging

Matured in new toasted and used oak casks in an open warehouse with a light roof and no walls where temperature fluctuations and changing conditions bring a unique aging profile.

Tasting notes

Rich and smooth with deep, intriguing notes of roasted grain, vanilla, and honey.

Donating profits

Until August 1st, 100% of global profits from Abasolo will go towards supporting farmers and other Abasolo partners.
